Kara and Dan at Attican Farms in Albany, Ohio grew the most beautiful Chonggak “ponytail” radish for us to make a super limited seasonal kimchi. This cute little radish is mild and sweet, fermented with the greens for a delightful and delicious contrast between tender greens and crisp radish.
Fun fact: Chonggdak “ponytail” radish kimchi aka bachelor kimchi, named for the hair style that unmarried men would rock during the Korean imperial era. Some believe they were the first bros to rock the man bun.
